amazing “recipe”

crazy mole stew…

in a big pot put…various cut up vegetables including but not limited to a handful of each onions, garlic, shallots, carrots, celery, corn, tomatoes, peppers, and a handful of spinach etc.

1 can Loma Linda Tender bits

1 can of rinsed black beans

fill with water to the top.

add some of the water to a jar orf Mole sauce and mix until smooth

add to stew. Throw in salt and spices to taste.

5 or so little corn tortillas cut into strips.

if you wish you can garnish with cheese or serve with tortillas or rice.

the longer it cooks the more flavors will blend. Makes a yummy vegetarian stew reminiscent of mole enchiladas but with more texture.

Apple Mint Coolers

Mix half and half

4 cups Apple Cider

4 cups peppermint tea

pour over ice and

garnish with mint and apple curls

I <3 Boursin! I first ate it at Espresso Delicioso on croissants with coffee it’s the best. Boursin has been around since the early 1960’s, Eat up and expand your consciousness;)

combine in a food processor:

16oz cream cheese

1 stick of softened butter

2 cloves fresh garlic

2 tbsp fresh chives

2 tbsp fresh Italian parsley

one fat shallot (optional)

a couple basil leaves (optional)

a pinch each of salt and pepper

blend in processor until fluffy and put in an airtight container overnight.

This is the best on croissants with romaine,butter lettuce and clover sprouts and a few sunflower seeds.

If I remember correctly,Espresso Delicioso used to serve it with turkey or ham and green leaf lettuce.

It’s not as good, but you can omit the butter, use light cream cheese and eat with veggie sticks.

The Best Veg*n Taco Salad

3 15 oz cans of beans, kidney, pinto and black

1 packet taco seasoning

2 cups shredded cheese

1 can black olives

1 package hearts of romaine lettuce

1 bag of corn chips

1 bottle wishbone russian dressing

taco sauce

drain and rinse the beans in a colander

put them over medium heat in a quart sauce pan

add one or two packages of taco seasoning and a quarter or half cup of water and gently stir over medium low heat until delicious, add a couple of tablespoons of Russian dressing and a tablespoon of  taco sauce and reduce heat stirring occasionally

drain olives and add them to romaine

put bed of broken chips on each plate, then top with romaine and olive mixture, then put a couple of scoops of taco flavored beans, top with a few chips and drizzle with Russian dressing.

When I make this it lasts us a couple of days and is delicious cold, just keep the chips, salad and beans separate so it all stays crispy.

you can add tomatoes, red peppers, sugar snap peas, green peppers, different colors of chips. this is a staple of my house that we adapted from Linda’s recipe

Makes 2 cups

This creamy garbanzo spread can be used as a sandwich filling or served as a dip with fresh vegetables or wedges of pita bread.

2 garlic cloves
1 tablespoon chopped fresh parsley
1 15-ounce can garbanzo beans
3 tablespoons tahini (sesame seed butter)
2 tablespoons lemon juice
1/4 teaspoon ground cumin
1/4 teaspoon salt
1/4 teaspoon paprika

Place garlic and parsley in a food processor and chop finely.

Drain beans, reserving liquid. Add beans to the food processor along with tahini, lemon juice, cumin, salt, and paprika. Process until very smooth, about 2 minutes. The mixture should be moist and spreadable. If it is too dry, add some of the reserved bean liquid to achieve desired consistency.

Per 1/4 cup serving

recipe to make ghetto laundry soap

Homemade Liquid Laundry Soap- Front or top load machine- best value

4  Cups - hot tap water
1  Fels-Naptha soap bar
1 Cup - Arm & Hammer Super Washing Soda*
½ Cup Borax

- Grate bar of soap and add to saucepan with water. Stir continually over medium-low heat until soap dissolves and is melted.

-Fill a 5 gallon bucket half full of hot tap water. Add melted soap, washing soda and Borax. Stir well until all powder is dissolved. Fill bucket to top with more hot water. Stir, cover and let sit overnight to thicken.

-Stir and fill a used, clean, laundry soap dispenser half full with soap and then fill rest of way with water. Shake before each use. (will gel)

-Optional: You can add 10-15 drops of essential oil per 2 gallons. Add once soap has cooled. Ideas: lavender, rosemary, tea tree oil.

-Yield: Liquid soap recipe makes 10 gallons.

-Top Load Machine- 5/8 Cup per load (Approx. 180 loads)

-Front Load Machines- ¼ Cup per load (Approx. 640 loads)

*Arm & Hammer “Super Washing Soda” - in some stores or may be purchased (at Meijer.com). Baking Soda will not work, nor will Arm & Hammer Detergent - It must be sodium carbonate!!
